This loaf packs finely minced pepperoni, grated parmesan, basil, and oregano directly into the dough, so every slice tastes like your favorite pizza without the sauce dripping down your arm.

The sourdough starter adds a tangy backbone that balances all that savory richness, and the bread machine handles all the kneading and baking.

Slice it thick for sandwiches, toast it for garlic bread, or just eat it warm with a smear of butter.

Chef Tips

  • Mince the pepperoni as fine as you can. Large chunks throw off the bread machine’s kneading rhythm and create pockets of grease.
  • Use real parmigiano-reggiano for the sharpest, most concentrated flavor. Pre-grated parmesan from a can won’t give you the same punch.
  • Crumble the basil and oregano between your fingers before adding. This releases their oils and intensifies the herb flavor throughout the dough.
