Ingredients

1 slice galangal dried, sliced, soaked for 20 minutes
3 stalks lemon grass fresh, bruised
2 each kaffir lime leaves
2 medium stalks coriander with roots
5 each guinea peppers lightly pounded with mortar
1 tablespoon chili sauce roasted
6 cups chicken broth
10 ounces shrimp medium, shelled
1 ounce mushrooms, straw
2 tablespoons fish soy
1 1/2 tablespoons sugar
1 x lemon juice

Directions

Place all soup ingredients except last 3 in a pot over medium heat and boil for 5 minutes.

Add the shrimp and mushrooms and just return to a boil.

Mix in seasonings.

Garnish with green onion.

An Absolutely Perfect Roast Goose!

I've destroyed any number of goose dinners and pulled out enough hair to stuff an army pillow over it. I hadn't tried the big birds again for years until I came across this recipe just before Christmas. To say that I was pleased with the way it came out would be an understatement. Just as promised, a moist, flavorful bird with crispy skin that we all fought over. The aroma from that oven put a feral glint in the eyes of my dogs the likes of which I haven't seen since they treed a possum last summer. I can't find the name of whomever submitted this recipe but whoever you are, thanks a million!
