Ingredients

2 cups corn kernels fresh
1 cup chicken cubed, cooked
1 cup cheese smoked, coarsely shredded
1/2 cup olives ripe, sliced
1/4 cup onion sweet red, chopped
1/4 cup sweet red bell pepper diced
1/2 cup mayonnaise, light
1/2 cup sour cream, light
1 x salt to taste
1 x black pepper freshly ground, to taste

Directions

Steam kernels until tender-crisp.

Cool.

Mix with chicken, cheese, olives, onion and red bell pepper.

Mix mayonnaise, sour cream, salt and pepper.

Fold into corn mixture.

Chill several hours to combine flavors.

The best for holiday dinners! You can delete the chocolate shavings and add a blueberry topping (fresh blueberries with suregel & sugar) and a dolup of whip cream. Everybody loves it! It's worht the calories.
