Smoked Turkey Calzones

Golden baked calzones stuffed with smoked turkey, ricotta, spinach, Parmesan and fresh tomato slices. Ready in 30 minutes using store-bought pizza dough. Freezer-friendly for easy meal prep.

Think of these as the lighter, smarter cousin of your usual Friday night pizza.

Store-bought pizza dough gets rolled into circles, then loaded up with a garlicky ricotta-spinach filling, slices of smoked turkey and fresh tomato before getting folded, sealed and baked until golden and crisp.

Thirty minutes. Four calzones. Zero delivery fee.

They freeze like a dream too, so make a double batch on Sunday and you’ve got grab-and-go lunches sorted for the week.

Kitchen Tips

  • Squeeze every last drop of water out of that frozen spinach. Wet spinach means soggy calzones, and nobody wants that.
  • Seal the edges well with a fork. If they pop open in the oven, your filling escapes and you’ve got a mess instead of a meal.
  • Dip in warm marinara sauce for serving. It’s not required, but once you try it you won’t go back.

Directions

Preheat oven to 375℉ (190℃).

Spray baking sheet with non-stick spray.

Thaw spinach, squeeze dry.

Combine spinach, ricotta, parmesan cheese and garlic.

Divide dough into 4 pieces, roll each to 6” circle. (I probably would make up my own dough if I had time but the pre-prepared isn’t bad.)

Spread spinach mix to within ¼ inch of edges of each circle.

Place 1½ oz turkey and 2 tomato slices one on half of circle.

Fold over and seal by pressing edges with fork.

Place on prepared baking sheet, bake 12 to 15 minutes, until browned.

Can be frozen and re-heated for lunches.
