| 1 | cup | split green peas | dried |
| 3 | pounds | lamb shanks | |
| 1 | each | onion | chopped |
| 2 | each | carrots | peeled, sliced |
| 2 | each | celery | stalks, sliced |
| 2 1/2 | cups | beef broth | |
| 1 | x | salt and black pepper |
Completely soften peas. Brown lamb shanks under broiler to remove fat; drain well. Mix all ingredients except shanks in crockpot; stir well. Add shanks, pushing down into liquid. Cover and cook on Low for 10 to 12 hours.

These come out like shortbread and are fantastic. They are soft out of the oven and harden up as they cool. I cut the batch in fourth since it seemed like such a huge number of cookies, and my three year old daughter and I ate the entire tray in an afternoon! Make the whole batch! -LH 03-02-01
