Ingredients

1 cup split green peas dried
3 pounds lamb shanks
1 each onion chopped
2 each carrots peeled, sliced
2 each celery stalks, sliced
2 1/2 cups beef broth
1 x salt and black pepper

Directions

Completely soften peas. Brown lamb shanks under broiler to remove fat; drain well. Mix all ingredients except shanks in crockpot; stir well. Add shanks, pushing down into liquid. Cover and cook on Low for 10 to 12 hours.

Serves 4 to 6

Chocolate Chip Butter Cookies

These come out like shortbread and are fantastic. They are soft out of the oven and harden up as they cool. I cut the batch in fourth since it seemed like such a huge number of cookies, and my three year old daughter and I ate the entire tray in an afternoon! Make the whole batch! -LH 03-02-01
