This no-cook salad brings together cubed pickled herring, chopped hard-boiled eggs, crisp apple, and onion, all folded into a garlicky sour cream dressing with a squeeze of lemon.
Fresh dill scattered on top gives it that classic herbal finish.
Serve it cold on slices of dark rye bread and it’s as festive as it is simple.

- Drain the pickled herring well before cubing. Excess brine will thin out the sour cream dressing
- Use a tart, firm apple like Granny Smith. It holds up in the salad and provides a crisp, sweet contrast to the briny herring

- Rye bread is the traditional pairing, but pumpernickel or crisp crackers work well too

Directions
Cut herring into small cubes.
Mix herring with onion, eggs, apple and lemon juice.
Combine sour cream, garlic, salt and pepper; add to herring mixture and mix well.
Sprinkle with dill or parsley. Serve with rye bread.
