Cottage cheese gets blended until silky smooth with lemon juice and onion powder, then folded with chopped shrimp and crunchy pistachios. Chill it for an hour and you’ve got a protein-packed dip with a surprising amount of texture and flavor.
It’s lighter than cream cheese-based spreads but still feels indulgent, especially scooped up with ruffled potato chips or spread on sturdy crackers.
Kitchen Tips
- Blend the cottage cheese until completely smooth. Any lumps left will make the spread look grainy. Give it the full two minutes in the blender.
- Use tiny canned shrimp if you’re in a rush. Rinse and drain them well. Fresh cooked shrimp taste better but canned works perfectly for a quick appetizer.
- Toast the pistachios lightly. A quick dry-pan toast deepens their flavor and adds extra crunch that holds up in the spread.

Directions
Place cottage cheese, lemon juice and onion powder in blender or food processor.
Cover and blend on high speed about 2 minutes, stopping blender occasionally to scrape sides, or process, 30 seconds or until smooth.
Pour into small bowl. Stir in shrimp and nuts. Cover and refrigerate at least 1 hour.
Serve with assorted crackers or ruffled potato chips if desired.
