Close your eyes, take a bite, and you’re on a beach somewhere in the Caribbean.

Shrimp get rubbed with a warm blend of oregano, thyme, cumin, paprika, and cayenne before hitting a hot skillet with shallots. A splash of white wine and orange juice creates a quick pan sauce that the shrimp soak up as it reduces, then fresh mango goes in at the very end just long enough to warm through.

Toasted coconut scattered over the top brings a sweet crunch that ties the whole tropical package together. A handful of cilantro finishes it off.

Kitchen Tips

  • Toast the coconut first. It only needs 4 to 5 minutes in the oven, but watch it closely. Coconut burns faster than you’d think and goes from golden to scorched in seconds.
  • Don’t cook the mango too long. One minute max. You want it warm and tender, not mushy. It should still hold its shape on the plate.
  • Let the liquid reduce almost completely. The wine and OJ should cook down to a glaze, not a puddle. That concentrated sauce is where the flavor lives.

Directions

Preheat oven to 350℉ (180℃).

Spread coconut in a single layer and bake 4 to 5 minutes until golden brown.

Place the shrimp in a medium sized bowl.

In a separate bowl, combine the salt, oregano, thyme, cumin, paprika, cayenne and black pepper and sprinkle the mixture over the shrimp.

Toss well, cover and refrigerate until needed.

Heat the oil in a large skillet over high heat.

Add the shallots and the shrimp and sauté until the shrimp turn pink - about 2 minutes.

Add the wine and orange juice and cook until almost all the liquid is absorbed.

Add the mango and cook until it is just heated through - 1 minute more.

Remove the pan from the heat and stir in the cilantro.

Adjust the seasoning if necessary.

Transfer the shrimp to warmed dinner plates.

Sprinkle with toasted coconut and serve immediately.
