On a scorching summer day in Delhi, this is what saves you. Sherbat is a traditional Indian lemon cooler that’s been quenching thirst for centuries. Fresh lemon juice, sugar, crushed ice, and a splash of rose water stirred together until the sugar dissolves and the whole thing turns into liquid relief.

The rose water is what elevates this beyond ordinary lemonade. That floral perfume hits your nose before the drink even touches your lips, making every sip feel exotic and cooling.

Five ingredients, twenty minutes, and four frosty glasses of something that tastes like it belongs at a Mughal garden party.

Kitchen Tips

  • Dissolve the sugar completely before straining; undissolved sugar settles at the bottom
  • Use freshly squeezed lemon juice for the brightest flavor
  • Start with 2 tablespoons of rose water and adjust to taste; it’s potent stuff
  • Serve immediately in chilled glasses for maximum refreshment
