Sheepherder bread traces back to the Basque sheepherders of the American West, who baked these loaves in cast iron Dutch ovens buried in coals while tending flocks across Nevada and California. This adapted home version uses a regular loaf pan and a hot oven, but keeps the spirit of the original.

The leavening comes entirely from active sourdough starter. No commercial yeast added. That’s what gives this loaf its characteristic tangy flavor and chewy interior. The tiny amount of baking soda balances the acidity of the starter slightly without affecting the rise.

Kneading until smooth and shiny is critical. The dough is ready when it pulls cleanly from your hands and stretches into a thin window without tearing. Underkneaded dough produces a dense brick; overworked dough turns tough.

Rise time depends entirely on the room temperature and how active your starter is. A warm humid kitchen might give you a doubled dough in an hour, while a cool one can take 3 hours or more. Trust the dough, not the clock.

Pro Tips

  • Feed your starter 4 to 6 hours before mixing so it’s at peak activity. A sluggish starter produces a flat loaf.
  • Use bread flour instead of all-purpose for a chewier crumb and better gluten structure if you want a more pronounced sourdough texture.
  • Score the loaves with a sharp blade before baking to control where they expand. Unscored loaves split unpredictably and unevenly.
  • Cool completely on a wire rack before slicing. Cutting warm bread compresses the crumb and tastes gummy.

Variations

  • Bake in a preheated cast iron Dutch oven for 20 minutes covered, then 15 minutes uncovered for a true sheepherder-style hearth crust.
  • Add 1 tablespoon of caraway or fennel seeds to the dough for an aromatic twist.

Directions

Into a large bowl, sift the dry ingredients, and dig a well in the center of the sourdough starter.

Blend the dry mix into the starter from the edges with enough flour to knead until smooth and shiny.

Place in greased bowl and let rise until almost double, 1 to 2 hours depending on how warm and humid.

Shape into 2 loaves and place in greased bread pans. Bake at 375℉ (190℃) F until done, 35 to 40 minutes.
