60 minHere’s a stir fry that doesn’t rely on sugar-heavy bottled sauces or a puddle of oil. Cubed chicken breast gets a quick marinade in orange juice concentrate, fresh ginger, poultry seasoning, and paprika, then hits a hot wok alongside a pound of broccoli florets.
The orange juice concentrate does double duty as both the marinade and the sauce base, bringing a natural sweetness that caramelizes in the pan without spiking blood sugar. A scattering of toasted sesame seeds adds crunch, and a squeeze of fresh lemon at the table ties the whole thing together.
It’s diabetic-friendly by design, low in sodium, and on the table in about 30 minutes including marinade time. Weeknight gold.
Kitchen Tips
- Don’t overcook the broccoli. You want it tender-crisp with some bright green color left. Mushy broccoli means you’ve gone too far.
- Get the wok screaming hot before adding anything. A lukewarm pan steams the chicken instead of searing it, and you’ll lose that caramelized edge.
- Frozen broccoli works in a pinch. Thaw and pat it very dry first, or the excess water will kill your sear.
