Chef Tips
- Use high-quality herring that’s already been salted and cured. Bone it and skin it carefully before cutting into diagonal pieces.
- Give the full marinating time. At 4 hours the dill and vinegar have barely penetrated. At 6 hours the flavor goes all the way through.
