80 minThe secret in the title is sea cucumber, a chewy marine ingredient prized in Chinese and Southeast Asian cooking. Stripped down to its tender inner muscles, then minced or blended, it disappears into a smooth dip that gives guests no idea what they’re eating until you tell them.
The technique is simple but specific. Tear the sea cucumber open, scrape out the long white muscle strips, discard the rest, then briefly cook those strips until firm. Blending or fine-mincing afterward gives the dip its signature mousse-like texture once folded into cream cheese and softly whipped cream.
Keep the whipped cream loose, just past soft peaks. Overwhipped cream makes the dip stiff and grainy once it chills. Season carefully with salt, black pepper and a little grated onion. A long stint in the fridge melds the flavors so nothing reads fishy on the first bite.
Pro Tips
- Look for prepared dried sea cucumber at Asian grocers. It will already be cleaned and rehydrated, saving major prep time.
- Chill at least 1 hour before serving. The cream cheese tightens, the flavors meld and the texture sets into something scoopable.
- Pair with sturdy ridged potato chips or rye crackers so the dip clings rather than slides off.
Variations
- Stir in a teaspoon of lemon juice and finely chopped chives for a brighter, fresher profile.
- Add a small spoon of horseradish or wasabi for a sharper, cocktail-party edge.
- Fold in finely chopped smoked salmon to play up the seafood notes if you’d rather not hide them.
