5 minThis pretzel seasoning is a quick brush-on glaze for homemade soft pretzels made in a bread machine. Three ingredients: honey mustard dressing, vegetable oil, and onion powder get mixed together and brushed over the shaped pretzels right before they go in the oven.
The honey mustard dressing does most of the flavor work. It brings sweetness from the honey, tanginess from the mustard, and enough body to cling to the pretzel surface. The oil helps it spread easily and promotes browning, while onion powder adds a savory layer that plays off the mustard.
As the pretzels bake, this glaze sets into a shiny, golden crust with a tangy, slightly sweet flavor. It’s a different approach from the traditional baking soda or lye bath that gives mall-style pretzels their dark, chewy exterior, but the result is still satisfying and much simpler.
Kitchen Tips
- Brush generously but evenly. Pools of the mixture in the pretzel curves will burn while thin spots stay pale.
