Crispy oven fries marinated in low-fat Italian dressing, then baked until golden. Just two ingredients, vegetarian, and way better than anything from a freezer bag.

2 hrsTwo ingredients. That’s all it takes to get crispy, seasoned oven fries with a fraction of the fat of deep-frying.
Thick-cut potato wedges soak in oil-free Italian dressing for an hour, soaking up all those herbs and tangy flavors. Then they hit a hot oven until the edges go golden and crunchy while the insides stay fluffy.
Basting them with the leftover dressing as they bake builds up a seasoned crust that’ll make you forget drive-through fries ever existed.
Pro Tips
- Cut the potatoes into thick, even wedges so they cook at the same rate. Thin ones will burn before the thick ones crisp up.
- Don’t crowd the baking sheet. Give each wedge some breathing room so the hot air can circulate and crisp them evenly.
- Flip the fries halfway through baking for even browning on both sides.

Thickly slice the potatoes lengthwise.
Place the potatoes in a flat baking dish .
Pour the dressing over the potatoes and marinate for 1 hour, turning occasionally to make sure that all are coated with dressing.
Preheat the oven to 450℉ (230℃).
Place the potatoes on a non-stick baking sheet.
Bake for 45 mintues, or until lightly browned, basting occasionally with dressing.
