Sauteed Halibut with Kiwi Chardonnay Sauce

Ingredients

4 ounces halibut fillets
4 tablespoons ghee (clarified butter)
1 each kiwi fruit sliced
Sauce
3 each kiwi fruit peeled
3 each shallots diced
3/4 cup chardonnary vinegar
1/2 pound sweet butter cut up

Directions

Sprinkle the halibut with the salt.

Lightly dust the fish with the flour.

In a large skillet place the clarified butter and heat it on medium until it is hot.

Saute the floured halibut fillets for 3 to 4 minutes on each side, or until they are golden brown and just done.

On each of 4 individual serving plates place one of the sautéed halibut fillets.

Pour on the Kiwi Chardonnay Sauce. Garnish each dish with 2 of the kiwi slices.

Celery Soup

This was an easy recipe, the most grueling job being the stripping of the celery (I just used my peeler). I threw in all the celery leaves which I found to be decent. I also added a little bacon before I liquidised, to satiate my boyfriend. It resembles a pea soup in taste because of that, but even without it had a nice strong, fresh flavour. A very nice recipe to cozy up with in the winter!
