Browned sausage meat gets mixed with sauteed onions, garlic, mushrooms, and a handful of Italian spices, then tossed with elbow macaroni and spaghetti sauce. The whole thing gets layered in a baking dish with cottage cheese between the layers, which melts into creamy pockets throughout.
The cottage cheese is the surprise here. It acts like a lighter stand-in for ricotta, adding creaminess and protein without making the casserole heavy. Topped with bread crumbs and grated cheese, the top crisps up golden while everything underneath stays saucy and tender.

Preheat oven to 350℉ (180℃).
Sauté sausage meat until light brown.
Drain fat, separate meat with fork, set aside.
Sauté onion, garlic aand mushrooms. Add sausage meat, spices.
Stir in sauce. Add macaroni and stir.
Arrange alternate layers of macaroni-meat mixture and cottage cheese; ending with meat.
Top with bread crumbs and cheese if desired.
Bake at 350℉ (180℃) for 25 to 30 min.
