This one-pan skillet is the answer: cubed Italian sausage, red-skinned potatoes, onions, and sweet red peppers simmered together until everything is tender and the peppers have gone meltingly soft. Four ingredients, no fuss, real food.
The order of operations is the smart part. Simmering the sausage and potatoes together in water lets the sausage fully cook while rendering its fat into the liquid, and the potatoes soak up all that flavor as they soften. By the time the water cooks off and the vegetables go in, the pan is essentially seasoning itself.
Red-skinned potatoes are the right choice here. They hold their cube shape through the simmer without disintegrating like russets would. Don’t peel them; the skin adds color and keeps each piece structurally intact.
Onions and peppers go in last so they retain some bite. Ten minutes is enough to soften them without losing their snap. Stir occasionally to prevent sticking as the liquid cooks down.

Directions
In sauce pan, cover potatoes and sausage with water; simmer, covered, until sausage is fully cooked, about 20 minutes.
Drain off water; add vegetables to potatoes and sausage in fry pan.
Simmer 10 minutes, stirring occasionally.
Serve immediately.
