This is basically shepherd’s pie gone American heartland: a hearty tomato-based ground beef filling topped with fluffy mashed potatoes and baked until everything melds. The Santa Fe Trail name nods to the Old West cattle-drive era, when hearty one-pan meals kept everyone fed after long days.

The filling uses canned tomato soup as both the binding sauce and the flavor base. It sounds like a shortcut and it is, but it works. The soup adds sweetness, body, and a tomato depth that would otherwise take multiple ingredients.

Beaten eggs get mixed into the mashed potatoes before spooning them on top. Eggs bind the potatoes and help them set into that golden, slightly soufflé-like crown as they bake.

Make sure the mashed potato topping reaches right to the edges of the casserole. A complete seal traps steam and keeps the filling bubbling without drying out.

Directions

Brown ground beef, onion and green pepper in a heavy skillet.

Add string beans and soup; mix well.

Bake for 30 minutes at 350℉ (180℃).

Add salt, pepper and eggs to mashed potatoes and spoon over.

Return to oven for 15 to 20 minutes.
