30 minRoast duckling stuffing mix is a bare-bones seasoning recipe meant to boost store-bought or homemade stuffing before it goes into the cavity of a roast duck. It’s deliberately minimal. The duck itself carries so much rich flavor and rendering fat that the stuffing works best as a sponge, not a competing flavor show.
Three small onions, quartered, are the key addition. As the duck roasts, the onions melt down inside the cavity, releasing moisture and sweetness that perfume both the stuffing and the bird from the inside out. Use whole quarters, not chopped. They hold their shape and steam slowly over the two-hour roast.
Salt and freshly ground pepper season the mix to complement (not overwhelm) whatever base stuffing you’re using. If your prepared stuffing is already salted, go lighter on the added salt.
The reason it works is the duck fat. As the bird roasts, fat drips down and saturates the stuffing, turning what starts as dry seasoned bread into a rich, savory, almost confited version of itself.
