| 3 | slices | turkey bacon | cooked and chopped |
| 24 slices | bread, french | day old and cut into 1/4 inch slices | |
| 1/4 | each | parmesan, parmigiano-reggiano cheese, grated | grated |
| Ricotta filling | |||
| 1 | cup | bread crumbs | |
| 1 | cup | ricotta cheese | non-fat |
| 2 | each | egg | or 1/4 cup egg substitute |
| 3 | tablespoons | basil | fresh and chopped, 1tablespoon dried basil leaves |
| 1/2 | teaspoon | salt | |
| 1/4 | teaspoon | black pepper | |
| 1 | clove | garlic | finely |
Set oven control to broil.
Mix Ricotta Filling and bacon.
Spread about 1 tablespoon ricotta mixture on each bread slice.
Sprinkle 1/2 teaspoon cheese on each.
Broil with tops about 6 inches from heat about 3 minutes or until bubbly.
Serve hot.

This recipe was more time-consuming than I usually like, but the results were wonderful. Also, it made a lot, so you could freeze some of it for a quick meal another time.
