Ingredients

3 slices turkey bacon cooked and chopped
24 slices bread, french day old and cut into 1/4 inch slices
1/4 each parmesan, parmigiano-reggiano cheese, grated grated
Ricotta filling
1 cup bread crumbs
1 cup ricotta cheese non-fat
2 each egg or 1/4 cup egg substitute
3 tablespoons basil fresh and chopped, 1tablespoon dried basil leaves
1/2 teaspoon salt
1/4 teaspoon black pepper
1 clove garlic finely

Directions

Set oven control to broil.

Mix Ricotta Filling and bacon.

Spread about 1 tablespoon ricotta mixture on each bread slice.

Sprinkle 1/2 teaspoon cheese on each.

Broil with tops about 6 inches from heat about 3 minutes or until bubbly.

Serve hot.
