Ingredients

3 ounces gelatin, flavored lime flavor
3 ounces gelatin, flavored raspberry
1 1/2 cup applesauce
18 each graham crackers double
1 envelope whipped topping, prepared
1/4 teaspoon almond extract
3 tablespoons powdered sugar
1/4 cup almonds blanched, toasted, chopped

Directions

Combine each package of jello with 3/4 cup applesauce. Stir until well blended, about 1 1/2 minutes. Place 2 double crackers end to end on platter. Spread with 1/4 cup lime mixture. Top with 2 double crackers; spread with 1/4 cup raspberry mixture. Continue layers, alternating flavors and ending with crackers.

Prepare dessert topping mix as directed on package, using 1/4 teaspoon almond extract instead of vanilla. Add confectioners sugar. Spread over sides and top of loaf. Sprinkle sides with almonds. Chill at least 30 minutes.

We have made this recipe over the years from memory, it originialy was in a Womans Day or Family Circle back in the mid 70's. It is just great, easy and highly recomend it to everyone. However I will say that it is best if let set for 6-8 hours or overnight, it marries and blends and softens the crackers. When sliced it looks like a giant petifore.

Celery Soup

This was an easy recipe, the most grueling job being the stripping of the celery (I just used my peeler). I threw in all the celery leaves which I found to be decent. I also added a little bacon before I liquidised, to satiate my boyfriend. It resembles a pea soup in taste because of that, but even without it had a nice strong, fresh flavour. A very nice recipe to cozy up with in the winter!
