| 2 | cups | swiss cheese | |
| 1/2 | cup | mayonnaise | |
| 1 | cup | sauerkraut | rinsed and drained |
| 2 | teaspoons | butter | |
| 1 | cup | corned beef | chopped |
| 1/4 | cup | salad dressing, thousand island | or 1/4 c mayonnaise & dash ketchup, relish |
| 2 | Tomatoes; | tomatoes | sliced, optional |
| 1 | each | green bell pepper | cut in rings |
| 1/4 | cup | bread crumbs |
Put sauerkraut in buttered 1 1/2 casserole dish.
Top with corned beef, broken into bits, then cheese.
Combine mayonnaise and Thousand Island dressing (or substitute made with mayo, ketchup and relish) to equal 3/4 cup ) and spread over cheese.
Top with tomatoes or green pepper.
Melt butter in microwave and blend with bread crumbs, spread over top.
Cook 12 minutes on HIGH (100%).

As I perused the soda section I encountered vanilla Pepsi, cherry Pepsi, Lemon Pepsi, caffeine-free Pepsi, and diet Pepsi. EVERYTHING but regular good ole fashioned...
I agree. The muffins are dense but moist with a very satisfying texture. I, too, added a cup of walnuts.
