Ingredients

3 pounds red snapper, whole fish or whitefish
1/2 teaspoon black pepper
2 pounds tomatoes, canned fresh, chopped
1 medium onion finely sliced
2 each bay leaves
16 each green olives pitted, sliced
1 teaspoon salt
3 tablespoons lemon juice or lime
2 tablespoons olive oil
2 tablespoons corn oil
2 large garlic cloves minced
1/4 teaspoon oregano
2 each jalapeno peppers chopped
1 teaspoon monosodium glutamate

Directions

Arrange slices of fish in a large oiled casserole or baking dish.

Mix all the other ingredients together in a saucepan.

Simmer together for about 5 minutes. Pour over the fish.

Bake at 350 degrees F. for 15 to 20 minutes.
