| 3 | pounds | red snapper, whole fish | or whitefish |
| 1/2 | teaspoon | black pepper | |
| 2 | pounds | tomatoes, canned | fresh, chopped |
| 1 | medium | onion | finely sliced |
| 2 | each | bay leaves | |
| 16 | each | green olives | pitted, sliced |
| 1 | teaspoon | salt | |
| 3 | tablespoons | lemon juice | or lime |
| 2 | tablespoons | olive oil | |
| 2 | tablespoons | corn oil | |
| 2 | large | garlic cloves | minced |
| 1/4 | teaspoon | oregano | |
| 2 | each | jalapeno peppers | chopped |
| 1 | teaspoon | monosodium glutamate |
Arrange slices of fish in a large oiled casserole or baking dish.
Mix all the other ingredients together in a saucepan.
Simmer together for about 5 minutes. Pour over the fish.
Bake at 350 degrees F. for 15 to 20 minutes.
