Ingredients

1 1/2 pounds red snapper fillets
1 x salt
1 x black pepper freshly ground
1 x nutmeg freshly grated
1 1/2 Teaspoons orange zest grated
1 teaspoon grapefruit peel grated

Directions

Preheat oven to 400F.

Put the fillets in a lightly buttered baking dish.

Sprinkle them lightly with salt and pepper and nutmeg and distribute the grated rinds on top.

Cover with foil and bake 15 minutes.
