1 hrsThis is ramen hacking at its most straightforward. A plain package of ramen noodles gets transformed with a fried egg on top, crumbled breakfast sausage patties, and a handful of sliced scallions, finished with enough soy sauce and hot sauce to make the whole bowl punch hard.
Cook the noodles to just shy of the package instructions, usually 2 to 3 minutes in boiling water. Overdone ramen turns to mush the moment it hits a hot bowl with sausage fat and soy. Al dente noodles hold their bite even after being tossed with the hot toppings.
Fry the egg with a runny yolk. When it breaks open into the noodles, it acts as a creamy sauce that pulls the whole bowl together. A fully set yolk misses the point. Keep the pan on medium so the whites set but the yolk stays soft.
Crumble the sausage while it’s still warm so the fat coats the noodles. That rendered pork fat is the unofficial flavor base here, and wasting it in a paper towel defeats the purpose.
Kitchen Tips
- Ditch half the seasoning packet if the sausage is salty. Between that, the soy, and the Mrs. Dash, it’s easy to over-salt.
- Use spicy breakfast sausage if you like heat. It doubles the flavor impact and cuts the need for extra hot sauce.
- Garnish with extra scallion greens and a drizzle of sesame oil for a slightly more polished finish.
- Eat it immediately. The noodles absorb broth fast and turn soggy if they sit.
Variations
- Swap sausage for bacon or Chinese lap cheong for a different pork profile.
- Add a handful of baby spinach wilted into the hot noodles for something green.
- Stir in a spoonful of gochujang or miso with the soy sauce for extra umami depth.

Place egg on top of noodles and cut up.
Crumble sausage patties into the noodles and add the onions; mix well.
