Rakott Krumpli is Hungary’s answer to the layered casserole, and it’s the kind of dish that feeds a crowd with almost no fuss. Boiled potatoes, sliced hard-boiled eggs, strips of ham, and sliced sausage get stacked in a deep buttered casserole, with each potato layer seasoned with salt and dotted with melted butter.

The top layer tells you everything about Hungarian cooking: a generous spread of sour cream and a tablespoon of sweet paprika, baked until golden and bubbling. That sour cream doesn’t disappear into the casserole — it sits on top and bakes into a slightly tangy, paprika-dusted crust.

Cook the potatoes in their skins before slicing them. It keeps their texture firmer so the layers hold their shape when you cut into the casserole.

This reheats well. If you refrigerate it before baking, add an extra 30 minutes in the oven so the center heats through completely.

Directions

Approx. Cook Time: 0:30 Hard-boil the eggs; peel and slice.

Drop potatoes in their skins in water to cover with 1 tablespoon salt. Cook until fork tender; slice.

Preheat oven to 350℉ (180℃).

Butter a deep casserole, and arrange a layer of potatoes on the bottom.
Season with salt.

Melt butter and sprinkle a little on top of the potatoes.

Cover with ham strips, repeat the potatoes, salt, and butter.

Arrange egg slices, then sausage slices on top, finishing with a potato layer.

Pour the remaining butter over, spread the sour cream and sprinkle the paprika on top.

Bake, uncovered, for 30 minutes.

Lengthen cooking time to one hour if the casserole has been refrigerated before cooking.

There is one tablespoon of paprika listed in the ingredients, but it is never mentioned in the instructions for putting the casserole together.
