The sweetness comes entirely from a cup of raisins boiled in unsweetened apple juice, which plumps them and creates a concentrated fruit syrup that flavors the entire batter. Cinnamon, nutmeg, and cloves do the rest, making these taste like a spiced fruit bar from a bakery, not a health food compromise.
Boiling the raisins in apple juice is the crucial first step. It softens them so they distribute evenly through the batter and releases their natural sugars into the liquid. That sweet, raisin-infused apple juice becomes part of the wet ingredients, replacing the sugar-and-butter base of a typical bar cookie.
Whole wheat flour gives these a nutty, substantial chew that all-purpose flour wouldn’t. It pairs naturally with the warm spices and holds up to the moisture from the raisin mixture without going gummy. Ingredients
Directions
In a saucepan combine the raisins and the apple juice.
Bring to a boil an cool.
Meanwhile, mix the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, egg and vegetable oil together.
Ad the raisin mixture and blend thoroughly.
Spread the mixture into a lightly oiled 8 inch square pan.
Sprinkle on the grated orange rind. Bake in a 350℉ (180℃) oven for 30 to 40 minutes.
Cool in the pan on a wire rack and cut into bars.
