45 minThis rainbow Jello is one of those desserts that gets gasps when you cut into it. Four bold colored layers of flavored gelatin alternating with creamy white filling made from sweetened condensed milk and unflavored gelatin, all stacked in a clear 9×13 pan so you can see every stripe from the side.
Patience is the whole game here. Each layer needs about 4 minutes in the freezer to set just enough to support the next one. Pour too soon and the colors bleed together. Pour too late and the layers will not bond and they separate into sheets when you slice.
The filling between each Jello layer is what turns this from a novelty into something people actually want to eat. That sweetened condensed milk sets into a smooth, creamy stripe that tastes like a vanilla panna cotta against the fruity gelatin.
Chef Tips
- Level the pan in the freezer before you start. Even a slight tilt means thicker layers on one side and paper-thin ones on the other.
- Let each Jello and filling layer cool to room temperature before pouring. Hot liquid melts the layer beneath it and wrecks the clean lines.
- Work quickly but carefully. You have about 4 minutes between layers, and once the gelatin starts setting in the bowl, it gets lumpy.
- Use a sharp knife dipped in hot water to cut clean slices. Cold gelatin drags and tears if the blade is not warm.
Variations
- Use any four Jello flavors you like. Berry blue, grape, cherry, and watermelon make a fun alternative rainbow.
- Add a drop of food coloring to the filling layers for pastel stripes instead of white.
- Make it in individual clear cups for a party-ready single-serve presentation.
Ingredients
Directions
For Jello layers: Mix each flavor Jello in individual bowls with 1 cup boiling water.
Let cool. For Filling: Mix and dissolve in saucepan the hot water and unflavored gelatin.
Add sweetened condensed milk and heat over low flame.
Bring to a boil, stirring occcasionally. Let cool.
Place a 9 x 13-inch clear baking pan in the freezer, leveled evenly.
Pour in first flavor of jello, let set about 4 minutes, until Jello is lightly set.
Pour ⅔ cup filling over set Jello, let set about 4 minutes.
Repeat layers with other flavors Jello and filling.
Note: Be sure jello and filling layers are cool before adding next layer!
