Ingredients

1 pound rainbow trout fillets
1 cup salsa
1/2 cup cheddar cheese shredded
1 each lemon sliced, wedges

Directions

Place fish in microwave dish. Pour 1 cup salsa over fish; cover, microwave HIGH 5 minutes. Rotate dish and microwave 3-5 minutes until fish flakes. Serve with shredded cheese and lemon wedges.

Toasted Pita and Pinto Bean Salad

For a side dish, this salad is wonderful. Easy to make and nice flavor, the leftover still can be very tasty, but have to seperate the lettuce and toasted pita bread.
