Ingredients

1/4 cup mayonnaise
1 tablespoon sweet red bell pepper red pepper, roasted, drained, chopped or pimiento, optional
1 tablespoon onion finely chopped
1 1/2 teaspoon cider vinegar
1 teaspoon prepared mustard dijon-style
1/4 teaspoon salt
1 x black pepper to taste
1 each potatoes idaho, baked, cubed

Directions

In small bowl combine first seven ingredients; mix well. Add potatoes; toss to coat well. Cover; refrigerate.

Makes 1 serving.
