Quick Oyster Pickup

A tasty seafood side dish made with oyster liqueur and cream of leek soup.

Ingredients

12ounces oysters fresh or frozen
2cups oyster liqueur and water
1each soup, cream of leek, mix 1 3/4 oz package
1cup milk
1tablespoon parsley leaves fresh, chopped

Directions

Thaw frozen oysters. Drain oysters, reserving liquor. Add oyster liquor and water to soup mix and bring to a boil, stirring constantly. Reduce heat, stirring occasionally. Add oysters and heat 3 to 5 minutes longer or until edges of oysters begin to curl.

Sprinkle with parsley. Serves 6.

Note: Approximately 65 calories per serving.
