This quesadilla pizza smashes two crowd favorites into one crispy, cheesy snack. A cheddar-stuffed tortilla base gets baked until golden, then loaded with cumin-spiked pizza sauce, refried beans, green chiles, sliced olives, and a final layer of Monterey Jack that melts into bubbly, stretchy goodness.

The two-step bake is what makes this work. Pre-baking the cheddar-filled tortilla base first gives it structure and crispness so it holds up under the toppings. Skip that step and you end up with a floppy, soggy mess that falls apart when you cut the wedges.

Ground cumin stirred into the pizza sauce is the bridge between Italian and Mexican flavors here. It’s a small addition, but it shifts the whole dish toward that Tex-Mex lane where it belongs.

Kitchen Tips

  • Brush the top tortilla lightly with oil before the first bake. It crisps the surface and gives the toppings something to grip.

Directions

Sprinkle one tortilla with Cheddar cheese; top with second tortilla.

Brush lightly with oil; place on baking sheet.

Bake in preheated 450’F. oven for 4 minutes.

In small bowl, combine pizza sauce and cumin; spread on Spoon on refried beans; sprinkle with chiles, green onion, olives and Monterey Jack cheese. Bake in preheated 450’F. oven for 3 minutes longer or until cheese is melted. Cut into wedges.
