| 1 | x | olive oil | |
| 2 | each | red onions | chopped |
| 2 | each | green bell peppers | diced |
| 2 | each | cucumbers | peeled, diced |
| 24 | each | anchovy fillets | cut |
| 4 | large | tomatoes | peeled, seeded, diced |
| 36 | each | black olives | pitted, chopped |
| 1/3 | cup | parsley leaves | fresh, chopped |
| 1/4 | cup | capers | |
| 1 | x | mayonnaise |
Split the rolls almost through and brush inside well with olive oil.
Mix remaining ingredients, except mayonnaise.
Moisten with mayonnaise and fill rolls.
Wrap each sandwich individually. Serve on a plate to catch filling as it falls.

Around the holiday seasons, you always see commercials that revolve around family dinners....
This recipe was great! I used chicken strips instead. I double dipped them as opposed to just once and that gave them an even cripisier coating. I made this for my younger brothers' birthday dinner and he loved them! He said, "These are so good, I can't even describe them." I'm sure that he'll be requesting them again soon.
