40 minSeitan is wheat gluten cooked in seasoned broth, and traditionally that means a long slow simmer. The pressure cooker cuts the whole job down to about 25 minutes once you’re up to pressure, and the high-heat environment builds denser, chewier texture than the stovetop method.
Start with any basic seitan mix (Arrowhead Mills and similar brands are common). Prepare the dough and broth per the box directions, then cut the kneaded gluten into 8 even pieces before it goes in. Uniform chunks cook at the same rate and won’t leave you with dense middles.
Letting the pressure drop naturally instead of quick-releasing keeps the seitan tender. A hard quick release shocks the gluten and can tighten it up into something rubbery.
Pro Tips
- Don’t skip cutting the raw gluten into pieces before cooking. A single ball turns leaden in the middle even after 25 minutes.
- Build flavor into the broth: soy sauce, garlic, ginger, bay leaves, onion, or any mushroom trimmings you have.

Directions
Prepare mix and water as in directions for Basic Seitan on box.
Prepare broth (for 14 oz.
) also. Cut Seitan into 8 even pieces and place with broth in pressure cooker. Bring to simmer. Attach lid. When up to pressure, let cook for 25 minutes. Remove from heat. Let cool so pressure will drop. Seitan is ready to eat.
