It became the prototype for the King’s Hawaiian sweet rolls now sold in every American supermarket, and that lineage is still detectable in the slightly tangy, eggy, lemon-perfumed crumb of a properly baked loaf.
Making it in a bread machine takes the work out of what was traditionally a labor-intensive bake. “Massa sovada” actually translates as “kneaded dough” because the original recipe required punishing hand kneading to develop the elastic structure that holds enriched bread together.
The machine handles all of that automatically.
The ingredient list reveals the bread’s character. Evaporated milk delivers more concentrated dairy proteins than fresh milk for richer flavor and longer shelf life. Two eggs add the signature golden color and tender crumb.
