The double citrus base does two things: the acid tenderizes the meat while the natural sugars in the orange juice caramelize on the grill, giving you those charred, slightly sweet edges. White vinegar and Worcestershire add depth and umami underneath the bright citrus.
Marinate for at least 4 hours, but a full 24 hours is where the magic really happens. The longer soak means flavor penetrates deeper into the meat instead of just sitting on the surface.
