A copycat marinade inspired by El Pollo Loco’s signature citrus-grilled chicken, built on fresh lemon and orange juice with chili sauce, garlic, and a hit of hot sauce.

The double citrus base does two things: the acid tenderizes the meat while the natural sugars in the orange juice caramelize on the grill, giving you those charred, slightly sweet edges. White vinegar and Worcestershire add depth and umami underneath the bright citrus.

Marinate for at least 4 hours, but a full 24 hours is where the magic really happens. The longer soak means flavor penetrates deeper into the meat instead of just sitting on the surface. Grill 20 minutes per side for bone-in pieces, and serve with warm flour tortillas and fresh salsa like the recipe suggests.

Kitchen Tips

  • Use freshly squeezed citrus, not bottled. Bottled juice tastes flat and won’t give you that bright, punchy flavor.
  • Don’t marinate longer than 24 hours. The acid will start to break down the chicken texture past that point, making it mushy.
  • Pat the chicken dry before grilling so it sears instead of steaming. The marinade has already done its job.

Variations

  • Add a tablespoon of ground cumin and a teaspoon of smoked paprika for a deeper spice profile.
  • Use lime juice in place of lemon for a sharper, more Mexican-leaning flavor.
  • Works on pork chops or shrimp too, just reduce the marinate time to 1 to 2 hours for seafood.
