40 minHomemade pizza that goes straight from your freezer to the oven beats any store-bought frozen pie by a mile. This version stacks the toppings: browned Italian sausage, ground beef, pepperoni, and sautéed onion all buried under marinara and a double hit of mozzarella and parmesan.
The layering order matters here. Cheese goes directly on the crust first, then the meats, then sauce on top. This keeps the crust from getting soggy during freezing and baking, since the cheese acts as a moisture barrier.
Flash freezing on the pan before wrapping in foil is what keeps everything in place. If you wrap it while still soft, toppings shift and you end up with a lopsided mess. Once it’s frozen solid, that foil wrap protects against freezer burn for weeks.
Bake it straight from frozen. No thawing. The high heat crisps the crust while the sauce bubbles and the cheese gets stretchy and golden.
Kitchen Tips
- Brown the sausage and beef fully before assembling. Raw meat won’t cook through properly from frozen.
- Use a sturdy pan you can spare for the flash-freeze step, or line it with parchment for easy release.
- Don’t overload the toppings. Too much weight on a frozen crust leads to a soggy center.
- These keep well in the freezer for up to 2 months if wrapped tightly.
Variations
- Veggie version: Swap the meats for roasted bell peppers, mushrooms, and olives.
- White pizza: Skip the marinara and use a garlic cream sauce with spinach and ricotta.
