The sauce is made from scratch, but it’s easy: onion, celery, and green pepper softened in oil, then simmered with tomatoes, tomato paste, oregano, and basil into a thick, savory spread.
The twist is the cheese. Instead of mozzarella, the sauce gets mixed with cottage cheese, which adds creamy texture and a protein boost while keeping the whole thing lighter. A sprinkle of parmesan on top browns under the broiler.

Directions
For the sauce, sauté onion, celery and pepper in vegetable oil until tender and translucent.
Add tomatoes, tomato paste and seasonings.
Cook over low approx. 1½ cups sauce.
For the sandwiches, mix 2 Tbs cottage cheese with 2 Tbs sauce.
Spread mixture on ½ toasted English muffin.
Sprinkle 1 teaspoon parmesan cheese over top.
Broil in oven for approx. 5 minutes
