DIY pizza starts with hands-off bread-machine dough, then it’s yours to top: tangy pizza sauce, melty mozzarella, and whatever you crave. A crisp, made-from-scratch homemade crust every time.

The bread machine handles the kneading and proofing here, working a simple pizza dough on the basic dough setting while you do nothing but wait. Bread flour is the smart pick, since its higher protein builds the chew and sturdy structure a good crust needs.

Once the dough is ready, divide it into four balls and let them rest under plastic for 20 minutes. Don’t skip that rest. It relaxes the gluten so the dough rolls out thin without snapping back at you.

Prick the rolled circles all over with a fork before topping, which keeps the crust from ballooning into big bubbles in the oven. A thin brush of pizza sauce, a scatter of mozzarella, and whatever toppings you love, then bake hot and fast until the edges crisp and the cheese blisters.

Directions

Place first 3 ingredients inside the bread pan. Add water. Close cover and place dry yeast into the yeast holder.

SELECT: BASIC DOUGH MODE.

Press start. (Breadmaker completes the basic dough mode 2 hours and 25 minutes later).

Divide the dough into 4 equal portions.

Roll each portion into a ball.

Place on a lightly floured surface. Cover with a plastic wrap and rest for 20 minutes.

Roll out each ball into a flat circle.

Place on a greased baking pan. Prick the surface with a fork.

Brush with 2 tablespoons pizza sauce. Sprinkle mozzarella cheese on top.

Garnish with ingredients of your choice.
