These roll-ups take the retro ham-and-pineapple flavor combo and pack it into a portable tortilla wrap for lunches, potlucks, or party platters. Sweet pineapple cream cheese smoothed across a warm tortilla, topped with thin-sliced ham and crisp lettuce, rolled tight.

Warming the tortilla for a minute on each side is the step most recipes skip. A cold, stiff tortilla cracks at the curves when you roll; warm and pliable, it bends without splitting and seals to itself as it cools.

The pinch of pumpkin pie spice (or cinnamon) in the cream cheese is a subtle trick. It amplifies the pineapple sweetness and plays against the salty ham, adding just enough warmth to pull the whole wrap out of boring sandwich territory.

Spreading the cream cheese within ½ inch of the edge is the rolling secret. Too close to the edge and filling squeezes out the ends; too far in and the wrap loosens and unrolls in the fridge.

Chopped walnuts or pecans in the spread give a slight crunch that keeps the wrap from being all soft textures.

Wrap each roll-up tightly in plastic and chill for 30 minutes before slicing into pinwheels or serving whole.

Kitchen Tips

  • Toast the chopped walnuts or pecans in a dry pan for 3 minutes before mixing in. Raw nuts taste flat inside a soft cream cheese spread.
  • Use thin deli ham, not thick-cut. Thick slices don’t roll cleanly and can cause the wrap to crack.
  • Pat lettuce dry thoroughly before layering. Wet lettuce sogs the tortilla within an hour.
  • For pinwheel presentation, chill the rolled wraps at least 1 hour before slicing. Warm cream cheese smears when cut.

Variations

  • Swap ham for smoked turkey or prosciutto for a different salty-savory angle.
  • Use spinach tortillas or sun-dried tomato tortillas for colored pinwheels on a party platter.
  • Add thinly sliced fresh pineapple rings to the filling along with the pineapple cream cheese for extra punch.

Directions

In small bowl, combine cream cheese, nuts and spice.

Mix well. For each roll-up, briefly cook tortilla on both sides in nonstick skillet (about 1 minute).

Do not brown. Cool slightly. Spread about 1/6 of the cream cheese mixture over tortilla to with-in ½ inch of edge.

Lay 3 thin slices of ham, overlapping across center of tortilla.

Top with 1 or 2 lettuce leaves. Roll up and wrap in plastic wrap.
