3 minMaking your own pineapple liqueur is one of the easiest homemade spirits projects you can take on. Fresh pineapple slices steep in vodka for a week, extracting all that tropical sweetness and acidity. Strain, filter, sweeten with simple syrup, and age for a month. That’s it.
The quality of your pineapple makes or breaks this recipe. Look for a large fruit with golden-orange skin and green, healthy leaves. That ripe sweetness translates directly into the finished liqueur. A greenish, underripe pineapple gives you a harsh, acidic result.
The one-month aging period after sweetening is what smooths everything out. Fresh-strained pineapple vodka tastes sharp and boozy. After aging, the flavors meld into something rounder, more complex, and genuinely sippable.
Kitchen Tips
- Use a clean glass jar with a tight seal for steeping. Plastic can leach flavors into the alcohol.
- Squeeze the steeped pineapple hard when straining. There’s a lot of flavor trapped in that fruit pulp.
- Filter through cheesecloth or a coffee filter multiple times until the liquid runs clear. Pulp left behind turns cloudy and can ferment.
- Add simple syrup gradually and taste as you go. Sweetness depends on how ripe your pineapple was. You may need less than half a cup.
Variations
- Spiced pineapple: Add a cinnamon stick and 3-4 whole cloves to the steeping jar for a warmly spiced tropical liqueur.
- Coconut pineapple: Use coconut-flavored vodka as the base for a pina colada-inspired liqueur.
- Chili heat: Drop a halved bird’s eye chili into the steeping jar for a sweet-hot pineapple liqueur that’s incredible in cocktails.

Buy the largest pineapple you can find as it will give you more meat.
Look for yellow to golden orange color for sweet tasting meat.
Avoid greenish color, bruises, discoloured areas, soft spots, or dried out brown leaves.
Slice pineapple and combine with vodka in jar.
Steep for 1 week.
Strain and squeeze as much juice as possible from pineapple.
Filter a few times until liquid is smooth and pulp free.
Add sugar syrup to taste.
Pineapple juice may be added for additional taste if desired.
Age 1 month.
