Microwave pineapple upside-down cake made with yellow cake mix, pineapple tidbits, brown sugar, and maraschino cherries. Ready in 30 minutes with no oven needed.

30 minNo oven, no problem. This pineapple upside-down cake comes together entirely in the microwave in about 30 minutes, using a boxed yellow cake mix and canned pineapple tidbits.
Butter and packed brown sugar melt together in the baking dish first, creating that sticky caramel layer that becomes the topping when you flip the cake. Pineapple tidbits and maraschino cherries get arranged in the syrup, then the batter goes right on top.
The cake mix gets blended with reserved pineapple juice instead of the water called for on the box. That swap packs more fruit flavor into every crumb. About 10 minutes on high and a toothpick test is all it takes.
Flip it immediately onto a serving plate while the caramel is still liquid. Wait too long and it cements to the dish.
Kitchen Tips
- Rotate the dish halfway through cooking for even results. Most microwaves have hot spots that can leave one side underdone.
- Use an 8×8 inch microwave-safe glass or ceramic dish. Metal is obviously a no-go, and thin plastic can warp.
- The cake won’t brown in the microwave. That’s normal. The caramel topping provides all the color and visual appeal.
Variations
- Use pineapple rings instead of tidbits for a more traditional presentation.
- Swap the yellow cake mix for a spice cake mix and add a pinch of ground ginger for a warmly spiced version.
- Skip the cherries and arrange pecan halves in the caramel for a nuttier finish.

Combine butter and brown sugar in (8×8 inch) baking dish .
Microwave 1½ to 2 minutes on HIGH, or until butter and sugar melt.
Stir. Arrange pineapple and cherries in syrup.
Blend cake mix, pineapple juice and eggs in medium mixing bowl on low speed of electric mixer.
Beat on medium speed for two minutes.
Pour evenly over fruit. Micro 8½ to 10 minutes on HIGH, or until wooden pick inserted in center comes out clean.
(Rotate dish ½ turn after 5 minutes) Immediately invert onto serving plate and remove dish.
