5 minThis virgin pina colada flip is basically a tropical ice cream float. Pineapple juice and cream of coconut create that classic island sweetness, club soda adds the fizz, and a scoop of vanilla ice cream on top melts into a creamy, frothy layer as you sip.
Mix the pineapple juice and cream of coconut first, then stir in the club soda gently. If you dump the soda in too fast or stir too hard, you’ll lose all the carbonation and end up with a flat drink instead of a bubbly one.
This one’s a crowd-pleaser at parties where not everyone is drinking. Kids love it too. Pour it into tall glasses and let the ice cream float on top so it slowly melts into the drink.

- Chill all the ingredients beforehand. Warm pineapple juice mixed with cold club soda goes flat almost instantly.
- Cream of coconut (like Coco Lopez) is not the same as coconut cream or coconut milk. It’s sweetened and thick. Using the wrong one will change the flavor and sweetness completely.
- For a thicker, shake-like version, blend the pineapple juice, cream of coconut, and ice cream together, then pour over the club soda in each glass.
