Pickled Mushrooms

Ingredients

2/3cup tarragon vinegar
1/2cup vegetable oil
2tablespoons water
1tablespoon sugar
1 1/2teaspoons salt
1each garlic clove minced
1dash red hot pepper sauce (eg. Tabasco)
1pound mushrooms fresh
1medium onion thinly sliced rings
1x sweet red bell pepper finely diced, sweet

Directions

In a glass bowl, combine the first seven ingredients.

Add mushrooms and onion; toss to coat.

Cover and refrigerate 8 hours or overnight. Sprinkle peppers
