Ingredients

2 pounds potatoes sliced
1 pound cottage cheese
2 ea Leeks, cut i leeks cut into 1/2 inch pieces, sliced diagonally
1 x herbal salt to taste

Directions

In a casserole dish, single layer sliced potatoes, leeks and cottage cheese and salt to taste until dish is filled.

Top with single layer of sliced potatoes.

Sprinkle paprika for garnish and bake at 375 degrees F. for 45 minutes or until top is browned and potatoes are tender when pierced with the tip of a sharp knife or skewer.

Oriental Pork Roast

I made this last night, and it was delicious! The only thing I would change perhaps is reduce to 1/4 cup the orange juice (instead of 1/2 cup) the next time I make it. Hubby loved it also, he said it was the best pork roast he ever had!
