This is a classic Southern gelatin salad that blurs the line between side dish and dessert. Cottage cheese, sour cream, whipped cream, and mayonnaise create a creamy base, while pineapple chunks, chopped pecans, and mini marshmallows add sweetness and crunch throughout.

Unflavored Knox gelatin dissolved in pineapple juice sets the whole thing into a sliceable mold. The heated juice blooms the gelatin and the cold water hydrates it first so you don’t end up with rubbery clumps in the finished salad.

The combination of cottage cheese, sour cream, mayonnaise, and whipped cream sounds like overkill, but each one does something different. Cottage cheese adds protein and mild tang, sour cream brings richness, mayo gives body, and whipped cream lightens the whole texture.

A squeeze of lemon juice at the end keeps it from tipping too far into cloying sweetness. It’s a small addition that makes a noticeable difference.

Kitchen Tips

  • Dissolve the gelatin in cold water first, then add the hot pineapple juice. Dumping gelatin straight into hot liquid creates lumps that never fully dissolve.
  • Use canned pineapple, not fresh. Fresh pineapple contains bromelain, an enzyme that prevents gelatin from setting. Canning deactivates it.
  • Chill until fully set before serving. Patience here. Cutting into a half-set gelatin salad is a gooey disaster.

Variations

  • Lime version: Add a package of lime Jell-O to the gelatin base for a green-tinted, tangier salad.
  • Cherry addition: Fold in maraschino cherries for pops of color and a sweeter bite.
  • Walnut swap: Replace pecans with walnuts for a slightly more bitter, earthy crunch.

Directions

Dissolve Knox gelatin in cold water.

Add ½ cup pineapple juice which has been heated.

Mix all remaining ingredients together. Add gelatin mixture.

Mix well. Pour into container of choice. Chill until set.
