45 minThese peanut butter pizza cookies are more craft project than baking and kids go wild for them. Large, flat peanut butter cookies get spread with chocolate frosting and loaded with toppings like cashews, candy-coated chocolate pieces, gumdrops, flaked coconut, and a drizzle of melted white chocolate. Each one looks like a mini dessert pizza.
Starting with a cookie mix makes this approachable for bakers of any skill level. The dough gets shaped into large balls and flattened with a sugar-dipped glass to create wide, flat rounds that serve as the pizza “crust."
The decorating is where creativity takes over. There are no rules. Set out bowls of toppings and let everyone build their own. The chocolate frosting acts as the “sauce” that holds everything in place.
Kitchen Tips
- Flatten the cookies to a full 3 inches across. They need to be wide enough to hold toppings without everything sliding off.
- Space them 3 ½ inches apart on the sheet. These are big cookies and they spread during baking.
- Cool the cookies completely before frosting. Warm cookies melt the frosting into a slippery mess.
- Drizzle the white chocolate last, after all other toppings are in place. It sets quickly and locks everything down.

Directions
Preheat oven to 375℉ (190℃)F.
For cookies place cookie mixes in large bowl. Break up any lumps.
Add eggs, contents of peanut butter packets from Mixes and water.
Stir until thoroughly blended.
Shape into 18 (2") balls (about 3 level tablespoons each).
Place 3½ inch apart on ungreased baking sheets. Flatten with bottom of large glass dipped in sugar to make 3” circles.
Bake at 375℉ (190℃)F for 9 to 11 minutes or until set.
Cool 1 minute on baking sheets. Remove to cooling racks.
Cool completely.
- Frost cookies with Chocolate Frosting. Decorate with cashews, chocolate pieces, gumdrops and coconut.
Melt white chocolate and shortening in small saucepan on low heat, stirring constantly until smooth.
Drizzle over cookies.
