Peaches and cream gelatin mold with fresh peaches, non-fat yogurt, and vanilla-orange extract. A light, sugar-free molded dessert with real fruit.

This is a retro gelatin mold made with real fresh peaches instead of canned fruit cocktail. Four peaches get blended smooth with non-fat yogurt to form the creamy base, while two more get sliced thin and stirred in for texture you can actually see and bite into.

The unflavored gelatin lets the peach flavor come through clean. No artificial peach taste or neon orange color. Just real fruit, yogurt, and a touch of vanilla butternut and orange extract that give the mold a warm, fragrant depth.

Dissolving the gelatin properly is the difference between a smooth mold and one with rubbery lumps. Sprinkle it over cold water first and let it soften for a few minutes. Then heat gently, stirring constantly, until it’s completely dissolved. No visible granules should remain.

Kitchen Tips

  • Use ripe, fragrant peaches. They need enough sweetness to carry the dessert since the sugar-free sweetener adds sweetness but not the same depth of flavor.
  • If peaches are firm, the brief stovetop cook with a splash of water softens them enough to blend smooth.
  • Chill for several hours until fully set before unmolding. Dip the mold briefly in warm water to release cleanly.

Variations

  • Nectarine version: Swap nectarines for peaches. No peeling needed, and they have a slightly tangier flavor.
  • Berry swirl: Before chilling, drizzle a thin puree of fresh raspberries through the mixture and swirl with a knife for a pink marble effect.

Directions

Slice 2 of the peaches very thin.

Sprinkle with sweetener equivalent to 3 teaspoon of sugar.

Set aside.

If peaches are very firm and not too ripe you may want to cook them in about a table spoon of water for a few minutes until tender.

Place 1 cup of the water in a small saucepan.

Sprinkle gelatin over water and let soften a few minutes.

Heat on low heat stirring frequently, until gelatin is completely dissolved.

Remove from heat.

In a blender container, combine yogurt and remaining unsliced peaches.

Blend until smooth.

Add gelatin mixture remaining 1 cup of water, remaining sweetener and extracts.

Blend until smooth.

Stir in sliced peaches.

Pour into a 9 cups mold and chill several hours until firm.

Unmold and serve.
