Patriotic jello cake is a red-white-and-blue poke cake with strawberry and blueberry jello soaked into a white cake, frosted with whipped topping. A July 4th potluck classic that slices into stripes of color.

A basic white cake mix gets pricked all over with a meat fork, then flooded with strawberry jello on one layer and blueberry on the other. The liquid gelatin runs into the holes and sets, streaking the white crumb with ribbons of ruby and navy that look striking when sliced.
Whipped topping frosts the whole thing snow-white, keeping with the flag theme. Fresh berries on top for garnish take it over the line, though the color inside is really where the magic lives.
Kitchen Tips
- Prick the cake deeply and close together (every half inch as directed). Shallow or sparse holes give you a cake with jello on top and plain cake below instead of integrated stripes.
- Let the jello mixture cool for 5 minutes before pouring. Boiling-hot jello poured onto cake can melt the crumb structure and give you a soggy mess.
- Chill the full 3 to 4 hours before unmolding. Rushing this step is how the jello ends up leaking out the sides and the cake collapses when you try to lift it.
- Dip the pans in hot water for just 5 to 10 seconds. Too long and the edges of the cake start to melt and the whole thing slides out as a wobbly pile.
Variations
- Use cherry and blue raspberry jello for even bolder red-and-blue colors.
- Layer fresh strawberries and blueberries in flag-stripe pattern on top of the whipped topping for full flag effect.
- Swap the whipped topping for homemade whipped cream stabilized with a little gelatin for a less-sweet, more grown-up finish.

Directions
Bake cake by directions.
Remove from pans. Clean pans.
Return cool cake to pans.
Prick cake with meat fork ½ inch apart. Mix strawberry jello and 1 cup boiling water, pour over layer.
Repeat with blue-berry jello for 2nd layer.
Refrigerate 3 to 4 hours. Dip pans in hot water to loosen cake.
Frost with cool whip.
